Seven in Seven

This month we introduce you to Jamie, McKay Forth Valley Sensory Centre Finance and Customer Service Assistant.

If you won a million pounds; what would you spend the money on?

If I were to win a million pounds I would buy a fleet of fast and unreliable cars, a whole bunch of guitars and I would take my wonderful daughters away on amazing holidays (such as Disneyland Florida).

Invite a dinner guest, alive or not – who would it be and why?

If I could invite a dinner guest over, it would have to be Ryan Reynolds – Reason: He’s a wonderful human being.

Cat or Dog?

I’m definitely a dog person, through and through.

If you could instantly become an expert in something, what would it be?

I would have to say if I could choose anything, it would be audio engineering – As a musician, I really enjoy making my music sound the best it possibly can and much of this is through trial and error.

Science or Science Fiction?

A bit of both, to be honest – I love science based facts, but I also enjoy the fantasy aspects of Science Fiction.

Growing up, I wanted to be….

I always wanted to be a firefighter or a pilot (but I don’t have the fitness required for either of these).

Sporting legend?

I’m not much of a sports person, but Colin McRae or Ken Block hold a special place in my heart.

Meet David

In January’s What’s On, we introduced you to David, who is the Forth Valley Sensory Centre Cook and is responsible for preparing fresh soup and tasty specials every day. This month, David delights us with his own recipe for Macaroni Cheese.

DAVID’S RECIPE for MACARONI CHEESE

Ingredients (4 servings) 

One (1) Marshalls or(own brand)Macaroni Pasta

One (1) Pint of milk(full fat or semi skimmed)

One (1) 500g (block) hard cheese (cheddar)

Two (2) tablespoons of butter or margarine

Two (2) heaped tablespoons of plain flour.

Optional: salt and pepper

Equipment

One (1) medium size pot (18/20cm)

One (1) box or hand grater

One (1) wooden spoon

One (1) chopping board

Method

Half fill medium sized pot with cold water and add the Macaroni to the pot.

Bring pot of water to the boil whilst stirring Macaroni.

Once the water has boiled, reduce pot temperature to a simmer. (add more water if necessary), to bring water back to half.

Test – Macaroni should be firm but not hard.

Before you start mixing your white sauce.

Grate cheese and place to the side.

White Sauce

In a separate pot, melt butter and mix butter with flour to form a paste mix/consistency. Slowly and gradually add the milk to the paste mix. Consistency of white sauce (runny custard).

Drain cooked pasta and then blend with your white sauce mix – stir well to combine sauce with pasta.

Taste blended pasta and sauce before serving up and add a pinch of salt and pepper to taste (tip).

Transfer Macaroni to one big bowl or 4 smaller serving dishes (bowls) add grated cheese to top of (each) dish.

Optional extras topping: sliced tomatoes.
