Meet David

In our January What’s On, we introduced you to David, who is the Forth Valley Sensory Centre Cook responsible for preparing fresh soup and tasty specials every day.

This month, David delights us with his own recipe for Lentil Soup.

Recipe for Lentil Soup

Ingredients (4 servings)

One (1) cup of red split lentils

One (1) large potato

One (1) whole onion

Two (2) vegetable or ham stock cubes

Four (4) medium sized carrots

Optional (salt and pepper)

Equipment

One (1) medium size pot (18/20cm)

One (1) box or hand grater

One (1) sharp knife

One (1) wooden spoon

One (1) chopping board

 

Method

Half fill medium sized pot with cold water and add the red split lentils to the pot.

Bring pot of water to the boil whist stirring lentils.

Once the water has boiled, reduce pot temperature to a simmer. (add more water if necessary), to bring back to half.

Add stock cube to pot (tip) – place (2) stock cubes in sieve, hold sieve over pot and pour a little warm water over cubes).

Wash carrots in cold water, remove the bottom from each carrot. Use root (top) of carrot to hold whilst grating, then dispose with root , grate(4)carrots, add to pot.

Wash and peel potato, grate potato and add to pot.

Remove external skin from onion, finely chop and add onion to pot.

Stir all ingredients together in pot, stop stirring and continue to simmer for 30 minutes.

Taste soup before serving and add a pinch of salt and pepper to taste(tip), others prefer to add their own salt and pepper for their individual taste sensation..
