If you won a million pounds, what would you spend the money on?
I would go on lots of holidays, definitely to Australia and Hawaii. I think I would probably buy a holiday cottage somewhere in the north of Scotland, as we love going there for weekends away.
Invite a dinner guest, alive or not – who would it be and why?
I would like to invite 2 if that’s OK. I would invite my Dad’s Mum, she would have been my Nanna but she died in her 40s, before I was born.
I have heard many stories about her and would have loved to have known her. She loved Elvis and I like his music too, so I’d invite him too and think it would be a nice wee dinner party.
Cat or Dog?
No surprises here, I prefer dogs! I have always loved dogs. I am a proud Guide Dog owner and Sadie is my third Guide Dog after Pixie and then Rolo. I have had quite the collection a Lab/Retriever, then a Golden Retriever and now a Black Lab.
If you could instantly become an expert in something, what would it be?
Dress making, so I could design and make my own clothes.
Science or Science Fiction?
Science, I’m not really in to Sci-Fi.
Growing up, I wanted to be….
I think the first thing I ever wanted to be was a dancer on the Generation Game! Lol!
Sporting legend?
It has to be Sir Chris Hoy. An amazing cyclist, a lovely man and a hero.
In January’s What’s On, we introduced you to David, who is the Forth Valley Sensory Centre Cook and is responsible for preparing fresh soup and tasty specials every day.
This month, David delights us with his own recipe for Carrot Cake.
DAVID’S RECIPE for CARROT CAKE
Ingredients (8 generous slices)
One (1) cup of plain flour.
One (1) cup of Caster Sugar
Four (4) carrots.
Two (2) eggs.
Half cup of olive or (sunflower oil).
Half teaspoon (one sachet) – bicarbonate of soda.
Half teaspoon (one sachet) – baking powder.
One teaspoon of cinnamon powder.
Equipment
One (1) 2lb loaf pan (or medium cake tin).
One (1) box or hand grater.
One (1) wooden spoon.
One (1) mixing bowl.
One (1) cup to measure ingredients.
One (1) teaspoon.
Baking paper to line loaf pan/cake tin.
Pre heat oven to 180 degrees Celsius.
Line the loaf tin with baking paper or with a coating of margarine.
Peel and remove tops from carrots, grate each carrot and place in mixing bowl. Too the mixing bowl
Add cup of plain flour.
Add cup of caster sugar.
Add cup and half of grated carrot.
Add 2 eggs.
Add half cup of Olive (Sunflower) oil.
Add half teaspoon (or sachet) of baking powder.
Add half teaspoon (or sachet) of bicarbonate of soda.
Add one teaspoon of Cinnamon powder.
Mix all ingredients together until consistency is gloopy. Pour mixture in to loaf (cake) tin, leave in oven for approximately 45 – 50 minutes. Check cake occasionally, test centre of cake with temperature probe or knife to ensure centre of cake is baked (probe/knife should have no wet cake mix residue), cake should by dry in the centre.
Leave to cool for 15 minutes, then remove cake from tin.
Enjoy slightly warm with a cup of tea, custard or ice cream (optional extras)
